Ingredients:
- 2 medium zucchinis, grated
- 2 eggs
- 1 cup flour (125g)
- 1/2 cup milk (120ml)
- 1/4 cup water (60ml)
- 2 tablespoons chopped parsley (or cilantro)
- 2 tablespoons chopped green onion (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon baking powder (optional, for fluffiness)
- Oil or butter for cooking
Instructions:
- Prepare the zucchini
Grate the zucchini and squeeze out excess water using a clean cloth or your hands. - Make the batter
In a large bowl, whisk together eggs, milk, and water.
Add flour, salt, pepper, and baking powder. Mix until smooth. - Stir in grated zucchini, chopped parsley, and green onions.
- Cook the pancakes
Heat a non-stick skillet or pan with a small amount of oil or butter over medium heat.
Pour a ladle of batter into the pan and spread it thin like a crepe.
Cook for about 2 minutes on each side or until golden brown. - Serve
Stack them on a plate and serve hot. You can enjoy them plain or with cheese, yogurt, or a dipping sauce.
